Pizza, Pizza

So the other week I went on kind of a Pizza kick. I made 4 different pizza's in one night!!

What can I say....I like having choices!

I saw this recipe over at The Pioneer Woman Blog for a Grilled Vegetable Pizza.
So I thought I'd try it.
Looks pretty darn good, right?......well it was! :)

I changed it a bit, just so Miss K could eat it if she wanted,
but I did make her her own mini pizza too :)
Hold the Cheese Please....with light sauce too.
And a traditional Cheese and Pepperoni

So after all this pizza eating, I thought, "What the heck!!! Lets make a Dessert Pizza!!"
Yup
A Dessert Pizza!!!
YUM!

You'll Need:
Pizza Dough (I bought mine at Trader Joe's)
Melted Butter
Cinnamon Sugar, or "Grinder of Goodness" (see below)
Peanut Butter
(I used Sunflower Seed Butter since Miss K is allergic to Peanuts)
Sliced Apples
Chocolate Sauce
Mini Chocolate Chips

I started by pre-baking the pizza dough with a little melted "Miss K friendly butter" brushed on it and grinded this "Grinder of Goodness" on it. (No, that is not it's official name...but it should be!)
After the dough was done baking I smeared Sunflower Seed butter on it like it was the Pizza Sauce.
Arrange the sliced apples all around, and drizzle with chocolate sauce. I used:
Again...YUM!
and lastly I sprinkled the mini chocolate chips (mine were dairy free) all around.
You can add nuts, dried fruit....whatever you fancy ;)
And if your feeling really crazy.....maybe grind a little more of that goodness on top!
Slice and Enjoy!!

I can safely say that everyone loved it.

We had chocolate sauce on our faces to prove it ;)

Brownies Anyone??

I am admittedly a bit of a chocoholic. Dark, milk...any kind of chocolate, and I'm there :) So you can understand my sadness when we found out that Miss Kourt is allergic to Dairy & Peanuts!! :*(  Not only is it scary that she may have a reaction if she has these foods (we carry an Epi-pen for her peanut allergy), but we really had to alter everything that we ate. Now, chocolate is not always made with milk, obviously Milk Chocolate is, but Dark Chocolate isn't. HOWEVER....whenever I look at 99% of dark chocolate bars they are "made in a facility that also processes peanuts and milk". Well, that does not help me. I  cant even buy products that are processed in a facility that also processes peanuts, that's how bad her allergy is. :(
You can imagine my Delight whenever I find "treats" that are completely "Free" from all the things that Miss Kourt cant have! :)
Enter... Traders Joe's NEW Gluten Free Brownie Mix!!!!

I saw this at the store and I picked it up right away and I saw the label
It's totally safe for Miss Kourt!!! YAY! I was so excited I told the cashier "Thank you so much for this!" :)
So of course I made them tonight! and I added a little sumthin sumthin to the mix. What did I add, you ask? Chocolate chips (dairy free) and some marshmallows (cause that's how I roll). ;)
 And I think SHE liked it!!!! And that's what matters most!!!

The batter is really thick, and they took a little longer to cook then what was on the package.... but that could just be my oven. Overall...these brownies were YUMMY!! :) A must try for anyone who loves chocolate (allergies or not) :)

Now we can all have a little treat now and then, and know that its safe for Miss Kourt.

Cooking with what you got

Happy Monday!!!

We all have those days where we just don't know what to cook, right. Or is it just me????
Well, today was one of those days for me. I look in the frig, and just stare. "what-to-cook???"
So I thought to myself...Cook with what you got!
The "Regulars", Onions & Garlic - Check
Fresh eggplant from my friends garden - Check
Fresh zucchini from MY garden - Check
Broccoli - Check
Red Bell Pepper - Check
Leftover Seasoned Turkey Breast - Check (easily omit for vegi meal)
S & P to taste
and for some carbs...Whole wheat Couscous - Check

 Throw them all together, and you got one YUMMY meal!!
And you know what????
Kourt Loves Couscous!! and Vegi's!!!
After this pic, She literally ate it ALL!!! :)

Cream Cheese Won Tons Anyone???

Well, this weekend was full of fun! I went to my family reunion on Sunday and saw a lot of family that I have not seen in years, and some I met for the first time. What a special day, I am so glad we were able to go :)

It was a Pot Luck, so I brought won tons to fry up for everyone....and I think they were gone within 5 minutes!! I take that as a GOOD sign. But I was mad at myself for not making MORE! :) Oh well....what can you do.

So I wanted to share the recipe with you. I'm really bad with giving measurement's and stuff, because I just kinda eyeball it, but I will do my best :)

Crab & Cream Cheese Won Tons:
1 brick of Cream Cheese Softened
2-3 Tablespoons Sour Cream
1 Tablespoon Green Onion Chopped Fine
1 1/2 Tablespoons Water Chestnuts Chopped Fine
2 Tablespoons Kamaboko (Fish Cake, found in Asian Markets)
3 Tablespoons Crab Meat (Imitation or Fresh, I used Imitation this time)
1 Package Won Ton Wrappers


In a Large bowl add the cream cheese and sour cream. (most recipes do not call for the sour cream, I just think it makes it a little more creamy, and this is how I was taught, so HA!) :) Chop the next 4 items up really fine and add them to the party. Mix well until everything is well incorporated.

Next get a teaspoon, a small bowl of water, and the Won Ton wrappers. Make sure that you keep a damp paper towel over the opened package of won ton wrappers so they don't dry out. Spoon about a teaspoon of the filling into the center of each wrapper and with your finger wet the edges of the wrapper and fold into a triangle. The water acts like a glue to keep the wrapper from opening up. You can either leave it in a triangle or you can fold the outer point in like its giving itself a hug :)


Repeat until all the filling is gone. This recipe will probably give you about 50 won tons (or one package of won ton wrappers)

(If you can't find Kamaboko or don't like it, you can omit it. No worries. Same with the crab.)

Just fry until golden brown.

Enjoy by itself or with a dipping sauce. I like using an Asian Sweet Chili Sauce. YUM!!!

And that's it!! :) Super easy, right!?!
